Foods especially fruits and vegetables grow moulds.
You will not always see mould colonies visable to the naked eye,
however after 3 or 4 days surface growth of moulds are visable
with microscopic examination. Any cavities of the fruit or vegetables
will be home to several species of moulds. The major threat from
these moulds is that the moulds become airborne and end up in
the a/c unit. Cover fruit and vegetables when removing them from
the cooler to your prep area. Any discoloration of fruits and
vegetables should be washed as soon as possible or the produce
discarded. If you are concerned about asthma and allergies due
to very sensitive people in your home fruits and vegetables may
be a carrier of moulds affecting your family.
